When does the public learn about the product (e.g., summer, before a holiday)?
Organic food.
It appeals to the educated, health-conscious, socially responsible segment of society. Crosses all age boundaries and appeals to all genders.
The public "must have this product" because there is an enormous amount of data showing a myriad of health problems associated with pesticides in food, antibiotics in food, chemicals in food.
The public learns about organic from commercials, from newspaper ads, from documentaries on television, from grocery store displays, from magazine articles.
The public learns about the product 24/7 – information about organic food is being disseminated in all media pretty much all the time. Perhaps a bit more before major holidays – as this is a time of heavy advertisement for food in grocery stores.
